Meringue is a French dessert typically made of whipped egg whites and sugar. Occasionally, an acidic ingredient such as lemon juice or vinegar may be added, as well as a binding agent such as salt, flour, or gelatin. The key to acquiring the perfect meringue is forming stiff peaks by denaturing ovalbumin (a protein in the egg whites) via shearing. Copper bowls also play a major role in perfecting meringue.
